Today I'm sharing with Bihari Dalpuri/Dalpuri recipe/Adra special Recipe. It is very simple to make with ingredients available at home.

~INGREDIENTS~
~For Dough~
Wheat flour- 2 cup
Salt- 1/2 tsp
Oil- 1 tbsp
Water- 1 cup (approx) or as required
Oil for frying


~For Stuffing~
Chickpea lentil/Chana dal- 3/4 cup
Water- 2 cups
Salt- 1/2 tsp
Turmeric- 1/2 tsp

~For Masala~
Garlic-5-8 cloves
Ginger- 1/2 inch
Green chilli- 2 or to taste
Red Chilli- 2 or to taste
Cumin- 1 tsp
Black pepper- 1 tsp
Water- 2 tbsp
Chopped coriander leaves- 2 tbsp
Onion- 1 big size (finely chopped)
Hing- 1/4 tsp
Salt to taste


Instructions

To make Chana dal stuffing
Add the chana dal in a pressure cooker along with 1 1/2 cup of water and pressure cook for 2 to 3 whistles. Now drain the water. The chana dal should be soft but not mushy.
Heat oil in a deep bottomed pan. Then temper the oil with cumin seeds, hing and grated ginger and sauté for 5 to 10 seconds.
Add the soft chana dal to the oil and sauté, slowly crushing the chana dal with a hand masher roughly
Now add turmeric powder, chilli powder, coriander powder, salt and sugar and mix everything well.
Cook the mixture for 5-6 minutes until the chana dal stuffing is cooked through and pulls away from the sides of the pan. Add chopped coriander leaves and mix well.
Take it off the heat and keep it aside to cool.

To make the dough

In a large bowl add the flour, salt, oil and rub them together. Now add water a little at a time and knead into a firm but soft dough.
To make Dal puris
Make small balls of the dough (approximately lemon sized). Then flatten it into a small circle and stuff it with a small ball of the chana dal stuffing. about 5 to 6 cms on the rolling board dusted with wheat flour.
In the meantime, heat the griddle or tava. Roll the dough into the size of paratha or roti. Care should be taken while rolling the dough as the paratha may break. So don’t worry about it
When the tava or griddle is sufficiently hot then fry the paratha on tava using ghee (clarified butter) or oil. The chana dal puri or paratha should become golden and crisp from both sides.

Make sure that the paratha edges are fried well. You can use spatula to press the edges. Use liberal amount of ghee or oil to fry the chana dal puri or parathas. 
Well fried chana dal puri or paratha will have some brown spots and might puff up little.
