INGREDIENTS:- to cook vermicelli:

  1. 2 tsp oil
  2. 1 cup vermicelli / semiya
  3. water to cook
  4. ½ tsp salt
  5. other ingredients:
  6. 3 tsp oil
  7. 1 tsp mustard
  8. ½ tsp urad dal
  9. 1 tsp chana dal
  10. 1 dried red chilli
  11. few curry leaves
  12. handful peanuts
  13. 1 inch ginger, finely chopped
  14. 2 green chilli, slit
  15. 2 tbsp onion, finely chopped
  16. ½ tsp turmeric / haldi
  17. 2 tbsp peas / matar
  18. 2 tbsp carrot, finely chopped
  19. ½ tsp salt
  20. 2 tbsp capsicum, finely chopped
  21. 2 tbsp beans, finely chopped
  22. ½ lemon
  23. 2 tbsp coriander, finely chopped

INSTRUCTIONS

  1. firstly, in a kadai heat 3 tsp oil and splutter 1 tsp mustard, ½ tsp urad dal, 1 tsp chana dal, 1 dried red chilli and few curry leaves.
  2. also, add handful peanuts and roast till turn crunchy on low flame.
  3. now add 1 inch ginger and 2 green chilli. saute well.
  4. further, add 2 tbsp onion and saute slightly.
  5. also add 2 tbsp peas, 2 tbsp carrot, 2 tbsp capsicum and 2 tbsp beans. saute for a minute.
  6. additionally, add ½ tsp turmeric and ½ tsp salt. saute for a minute.
  7. cover and cook for 2 minutes or till vegetables turn soft.
  8. add in cooked semiya and mix gently. do not over mix as semiya will get mashed.
  9. now add 2 tbsp coriander and ½ lemon. mix well.
  10. finally, serve semiya upma with hot masala chai for morning breakfast.
